Keelan Bijker Of The Jungle Giants Has Opened A Cafe In Brissy

The drummer of local Brisbane band The Jungle Giants Keelan Bijker is now the proprietor a brand new cafe. Located in the Brisbane suburb of Spring Hill, Two Donkeys cafe is located on the ground floor of the Novotel Hotel.

“I grew up with two miniature donkeys as childhood pets,” Bijker told Broadsheet on why he chose the name Two Donkeys. “This is an ode to them. Poppy and Lucy.”

But Bijker hasn’t done it alone. The head barista is Spencer White of indie group Spencer Harvey, while Sam Sargent of The Belligerents and Moses Gunn Collective built the bar, tabletops and shelving for the space.

Bijker admits his hospitality experience is less-than-extensive, but says his passion will more than make up for that. “I worked at a coffee shop in 2012 for about six months,” he said. “It’s been a bit of a whirlwind. It’s been good, though, deciding what you want to do and how you want to do it.”

Two Donkeys is set to feature Blackboard coffee and Bijker has carefully curated the menu. “We want to keep it simple. One bean, no cold drip – one thing done well,” he said. “Same with the menu. There’s all-day breakfast, lunch from 11am, about 10 items on the menu.”

Two Donkeys is located at 97 Astor Terrace, Spring Hill – and is open Monday to Friday, 6am-6pm.
